I enjoy creating this baked Mexican chicken dish for my family because it is simple to prepare and a favorite. To prepare this, you will need the items listed below:
Recipe:
- 3–4 boneless, skinless chicken breasts (any cut of chicken will suffice)
- One cup of salsa.
- 2 cups shredded quesadilla cheese or Mexican blend
- 1 garlic clove, minced
- Optional: sliced onion or bell pepper.
- One teaspoon of fajita seasoning.
- Add salt and pepper to taste.
- 3 to 4 cups of prepared Mexican rice.
- Preheat your oven to 400 degrees.
Place the chicken breasts in a large baking dish and season both sides with salt, pepper, and fajita seasoning. Tip: To avoid dirtying up another dish, I season the chicken in the pan in which I’m baking it.
Pour the salsa equally over the chicken breasts. Sprinkle the minced garlic over this. If you are adding sliced onion and/or bell peppers, do it now on top of the salsa.
Sprinkle the cheese evenly over the chicken, then bake for 30 to 40 minutes, or until the internal temperature reaches 165 degrees.
Remove the pan from the oven and let it cool for a few minutes. Enjoy!
Note: I prefer to add onions and bell peppers to my recipe at times since it tastes like smothered fajita chicken, but sometimes I simply add the onions or leave them out altogether. There are numerous ways to customize this dish.
I prefer to serve this smothered Mexican chicken with a side of Mexican rice and a sprinkle of cheese on top. You could also cut this up and put it on a tortilla.
